Cacao Beans, Raw
Raw cacao beans are the dried and fully fermented seeds from the fruit of the cacao (or cocoa) tree. Cacao beans are the taste-determining raw materials of chocolate. From the beans other cacao solids can be derived and cacao butter can be extracted. In general, cacao is considered to be a rich source of antioxidants such as procyanidins and flavanoids, which may impart anti-aging properties. Cacao is a stimulant and contains the compounds theobromine and caffeine.
