Coconut blossom syrup has been used as a traditional sweetener for thousands of years in the South-Eastern Asian regions. Farmers climb the coconut palms and collect the sugar blossom syrup (toddy) by gently slicing the stamp of the flower. The mild, fruity tasting syrup has a low glycemic index and is a special treat in smoothies or at pancakes and porridge.
